Martha and Tom are working earnestly to help the people of the Upper Midwest cope with the crippling burden of Too Much Squash. Pondering Delayed Fermentation

Tom (of the consistently excellent local blog Martha and Tom) ponders baking guru Peter Reinhart’s technique of delayed fermentation, runs a test, snaps photos, and issues a verdict. Reinhart is a master of his art, and it’s highly entertaining (and educational) to see one of his key theories so thoughtfully scrutinized.
