Squash-o-Rama

Martha and Tom are working earnestly to help the people of the Upper Midwest cope with the crippling burden of Too Much Squash. They’ve put together a single blog post featuring five days of squash: Curried Kuri Squash Soup, Delicata Squash Enchiladas, Stuffed Roast Acorn Squash, Spaghetti Squash and Broccoli Gratin, and Butternut Squash Spaetzle.

    I’ve gradually been working through all of my CSA squash but I have at least seven specimens left of varying varieties. And am not willing to eat squash for five days in a row. Come to think of it, I made such a large batch of curried squash soup I may have eaten it for five days in a row…ugh.
