Fish Bites at the Minnesota Zoo’s Discovery Bay

Seafood and wine lovers enjoyed an environmentally friendly treat at an event last week Thursday at the Minnesota Zoo’s Discovery Bay. The event, called Fish Bites, promoted ocean-friendly seafood options and environmental awareness among local seafood lovers and chefs. All ten chefs present pledged to use sustainably caught and raised sea foods for the next year in their restaurants and catering. Guest host Sue Zelickson offered insight into the myriad “green” options available to consumers and proprietors that are typically overlooked. Lakeville Liquors paired the dishes with wines. The three dishes pictured above (clockwise) are: Masu Sushi & Robata’s Inside Out Roll with Loch Duart salmon, nori, veggies, spicy mayo, and sweet unagi sauce, paired with Ritual Pinot Noir, by Executive chef Alexander R. Chase; Lancer Catering’s miso-sake honey-marinated Barramundi with twisted soba noodles, citrus soy glaze, and handmade Barramundi pot sticker with Thai chili sauce, paired with Green Truck Sauvignon Blanc, by Executive Chef Frankie Berberena; and Sea Change’s arctic char with beets, green apple, yogurt, and walnuts, paired with Illumination Sauvignon, by Chef de Cuisine Jamie Malone.
