The culinary world in Minnesota (and beyond) is going from a time of unprecedented plenty, when loftily minded mid-sized independent restaurants could launch and grow at a reasonable pace to a desperate time of scarcity. We haven’t passed our first pandemic winter, and already we’ve seen not just a die-off of concepts, but the initial green shoots that suggest the future, at least until a (probable) end of the pandemic and (hopeful) recovery of the economy.
