    Where does the fascination with putting the time and effort into stripping the nutrients off potatoes come from? I, for one, can’t remember the last time I felt the need to do that.

    I, too, prefer skins on my potatoes–mashed, baked, boiled, fried, whatever… though my Swedish heritage calls for the occasional all-white peeled, boiled potato (perhaps it’s part of the Scandinavian aesthetic?)
