The farm-to-table focused Copper Hen Cakery has signed a lease for 2515 Nicollet Ave., between Spyhouse and The Bad Waitress, as per an update on their Kickstarter page. The bakery will formally be known as the Copper Hen Cakery & Kitchen and feature full lunch and dinner menus, with a target opening date of April 2014. Via the update: “We have added on a large farmhouse style lunch and dinner menu as well as, made from scratch breads, local beers on tap, wine, and a weekend farmhouse brunch! All of our menu items will be made from scratch, and will include: soups, salads, sandwiches, entrees (such as chicken pot pie, cast iron skillet macaroni and cheese, shepherd’s hand pies made with a stout gravy, juniper chicken stew and more), pizzas, cheese and meat boards, large chocolate chip cookies served straight out of the oven with ice-cream, and lots more! Of course cakes and other desserts will still be served and catered as a main staple at The Copper Hen!”
