Sep. 8 marks the glamorous debut of Salut Edina’s new executive chef, Christopher Van Proosdy — he’s inaugurating second-Tuesday-of-the-month chef’s tasting dinners. The dinners feature five courses for $37; an additional $20 funds a wine pairing. The debut dinner features, among other things, a braised pork belly risotto with wild mushroom, asparagus, and sage and a petit osso bucco in smoked onion broth, with thyme crouton and salsa verde.
